1 Bleu offers a cornucopia of tantalizing fresh local and imported seafood, prime beef and organic poultry dishes, paired with superb regional and international ingredients. The Regent’s signature fine dining establishment 1 Bleu benefits from a unique partnership with the legendary Le Cordon Bleu, making this only the second Le Cordon Bleu restaurant collaboration in North America.
Discriminating diners will find culinary contentment from the finest and freshest provisions with an inspired, contemporary menu full of Mediterranean flavors, combined with produce from South Florida green markets and savory local seafood. With the contribution of Le Cordon Bleu’s chef, the expertly trained, international staff will utilize the finest ingredients, including local stone crabs, pompano, and Florida grouper, top-grade Hawaiian yellow fin tuna, New England day boat scallops, Bronzino from the Mediterranean Sea and many other hard-to-find select seafood items.
Meats as well will be the best the world has to offer: Certified Angus Beef, Dry Aged Prime Steaks, Wagyu Beef, Free Range Chicken, Berkshire Pork and Sonoma Lamb, to name a few. One of the most exciting menu highlights is the “Plateau des Fruits de Mer” (fresh shellfish and crustacean assortment served on crushed ice).
To drink, the restaurant will feature AquaHealth filtered water, an extensive “Glass Wine Display” offering many wines by the glass along with half bottles, traditional 750ml bottle and magnum wine selections from North and South America, Italy, France, Spain, Australia and other parts of the world. And for finishing touches, the One Bleu dessert experience is filled with delicately prepared selections like “Tropical Fruit Soup”, Grilled Pineapple, Coconut Ice Cream, and Chilled Anisette Soup or the exquisite “Petits Fours” of Churros con Chocolate, Guava Pate de Fruit with Goat Cheese, and Pistachio Macaroons.
The View Bar
At a hotel as impressive as The Regent Bal Harbour, it isn’t surprising that casual dining takes on a sophisticated, yet comfortable flair. The View Bar is a boutique hot spot for lunch, dinner and drinks – perfect for a friendly cappuccino, a light bite to eat, relaxing cocktails at sunset, or an aged Port after dinner. Wagyu Beef Sliders with Remoulade, Smoked Salmon and Mozzarella Pizzette with Balsamico, and Spanish Scampi with Lemon and White Truffles are all perfectly executed to the ultimate satisfaction of the guest. Classic hand-blown glass barware, oversize martinis, and silver flatware all reflect the timeless luxury of this destination. Yet, at the same time, bars and seating areas dotted with mosaic glass in beach colors and striking dark wood accents, creating a chic, contemporary atmosphere unlike anything else in the area. An impressive sculpture created by renowned artist Guy Dill near The View Bar’s outdoor seating serves as a landmark for the place in South Florida to meet with friends and enjoy a ultra-cool, incredibly classy cocktail.
Aqua Soleil Pool, Bar & Grill
Features a dining experience focused on healthy foods and living, with natural spa cuisine. The menu, which is available both poolside as well as at the spa, contains numerous alternative dietary selections. Traditional favorites like hamburgers are reinvented to be completely free of nitrates and antibiotics, drinks and smoothies are made from fresh fruits with energizing ingredients, soy and rice milk products replace more standard dairy fare, and snacks, salads, and sandwiches make the menu as unmatched as the famous Guerlain spa itself. As well, a number of beach and poolside cabanas also offer a private outdoor dining experience or for a Guerlain signature massage. It all combines to elevate the beach and pool dining experience to a first-class experience.
